cashew pannacotta with strawberry sauce

pannacotta:
- 280 g wasser
- 70 g cashewmus
- 2 msp bourbonvanille
- 60 g agavendicksaft
- 1 g agar-agar
- 1 prise salz
erdbeersosse:
- 150 g erdbeeren
- 30 g agavendicksaft
- 2 msp bourbonvanille
- 1 prise salz
- pfeffer
garnieren:
zubereitung 20 minuten + 60 minuten kuehlzeit
pannacottazutaten glatt mixen.
20 sekunden aufkochen.
in 4 foermchen verteilen.
1 stunde in den tiefkuehler
erdbeeren putzen.
mit uebrigen zutaten puerieren.
sosse auf die panacotaa verteilen.
mit heidelbeeren garnieren.
2018-11-18: moni made her own cashew pannacotta with plums, starting with
self-made cashew mus from raw cashews:
- roast 15 minutes at 150 degrees in the oven then mix in the mixer,
taking a break whenever it begins to get warm, maybe ten times or more.
during the breaks, more oil seeps out, giving more fluid for the further mixing.
- boil plums with red wine, agava sirup, cinnamon, chili, cardamon, vanilla, pinch of salt.
- with the cashew mus and boiled plums prepared, mix together as described above.
